Super Easy Brownies

It takes more effort and brain power deciding what to watch next on Netflix than making these brownies!


  • 1/2 cup butter, soften
  • 1 cup white sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • 100-150g block of chocolate

Icing (optional):

  • 3 Tbs butter, softened
  • 3 Tbs unsweetened cocoa powder
  • 1 tsp honey
  • 1 tsp vanilla extract
  • 1 cup icing sugar


  1. Preheat oven to 175C.
  2. Line 8″ square/round or 9″x7″ rectangle baking tray with baking paper
    (No baking tray or pan? No problem – just any other oven-safe tray that is at least 2″ deep)
  3. In the mixing bowl: add the 1/2 cup of soften and white sugar.

  4. Use spatula and stir together – it will look grainy and chunky.
  5. Stir in one egg at a time.
  6. Stir in the 1 teaspoon vanilla.

  7. Sift in the 1/3 cup of cocoa, 1/2 cup flour, salt, and baking powder – then stir. It will become a thick batter.

  8. Chop up the block of chocolate to small chunks.
  9. Stir in the chocolate chunks.

  10. Pour the batter into the baking tray.
  11. Bake in the oven for 20 to 25 minutes.
  12. Take it out of the oven and let it cool in the pan for 15 minutes, then lift it out onto a cooling rack.

  13. Icing: Sift the icing sugar into a bowl.
  14. Add the softened butter, cocoa, honey,  vanilla,
  15. Stir or whisk until it is smooth.

  16. Ice the brownies while they are warm (but not hot).
  17. Slice up the brownie – try and not eat them all in one day!
